Meat / Fish Dishes

 

 

1-2-3-4-5 (Asian-Style Stew) / Patti B.

For 2lbs of rib meat (pork, beef, lamb, etc.) you need:

  • 1 Table Sp Wine (optional)
  • 2 Table Sp Vinegar (dark)
  • 3 Table Sp Sugar
  • 4 Table Sp Soy Sauce
  • 5 Table Sp Water (usually more, or enough to cover the meat in the pot)

Note that the proportion of ingredients is for reference only, so feel free to adjust them by trial and taste. If you don't have vinegar, ketchup works too!

  1. Place everything (including meat) into a pot to boil and turn the heat to low until the meat is tender. This usually takes about 40 min to 1 hour.
  2. Make sure you stand by in the beginning till the water is boiling, and then turn the heat down immediately, and check the water constantly so it doesn't burn.
  3. Serve immediately or let it marinate at room temperature for a few hours.

Creamy Chicken Enchiladas / Ashley F.

Serving Size: 6

  • 1 can Condensed Cream of Chicken soup
  • 1 can Creamed corn
  • 1 bunch green onions – chopped
  • 3 Tbsp Fajita or Enchilada seasoning
  • 2 cups chicken – cooked
  • ½ cup sour cream
  • ¼ cup milk
  • 1 ½ cups shredded cheddar cheese
  • 2 cups chopped green chile
  • ½ cup sliced ripe olives
  • 12 flour tortillas
  1. Mix first 9 ingredients together using only half of the cheese.
  2. Spread about 1/4 cup of chicken mixture on each flour tortilla, roll up tortilla and place seam side down in a baking dish. Repeat until all tortillas are filled.
  3. Pour remaining mixture on top of tortillas and top with remaining cheese and sliced ripe olives. Bake at 350F oven for 25 minutes or until heated through.

Empanadas / Lauren H.

  • 1 pound of ground beef
  • 1 onion
  • 1-3 cloves garlic
  • 1 (6oz.) can of tomato paste
  • Some hot sauce (about 1 tablespoon)
  1. Sautee the onions and garlic.
  2. Brown the meat (w/ the onions).
  3. When meat is brown, add remaining ingredients. Let everything cool a good bit while you make piecrust. You can use store-bought or make your own.
  4. Roll out the dough and cut out medium sized circles. Assemble by filling circles with about a spoonful of the meat mixture and fold over the dough, sealing the ends with a fork.
  5. Brush the tops with egg whites and bake in an oven at 400 degrees F, until golden brown, or if you want to do it the good old Panamanian way, fry them instead of baking them.

Rolled Cabbage / Amy S.

  • 1 cabbage (cored)
  • 1 small onion- minced
  • ½ carrot- minced
  • ½ small tray of ground beef
  • 1 egg
  • ½ cup bread crumbs (enough so that mixture is not too wet)
  • ½ jar of tomato sauce
  1. Put the cored cabbage in a bowl, cover with plastic wrap, and microwave for about 5 minutes until leaves are soft enough to wrap.
  2. Mix the next 5 ingredients together. Lightly salt and pepper.
  3. Put the mixture on the cabbage leaves and roll. Place in a pot with tomato sauce. Put enough water to cover the tops of the rolls. Simmer about 25 minutes.

Seared Encrusted Tuna Steak with Cilantro and Basil / Mallory B.

  • 1 small dried red Chili
  • 1 Tablespoon coriander seeds
  • ½ clove garlic
  • 1 handful of basil, finely chopped
  • 1 handful of cilantro, finely chopped
  • juice of 1 lemon
  • Salt and fresh ground pepper
  • 4 Tuna Steaks (8-10 oz each, about ¾ inches thick)
  1. Smash up the chili and coriander seeds in a mortar and pestle.
  2. Add the garlic, basil, cilantro, and lemon juice to taste. Mix together, and season.
  3. Lay tuna steaks on a tray, season both sides and rub the mixture on to each side.
  4. Rub a very, very hot ridged grill pan or frying pan with a little bit of oil on a paper towel, then put on the Tuna. You want to sear the tuna so that it toasts, fries, and browns (About 45-60 seconds on each side- the inside will still be rare or very pink).
  5. Serve with salad and potatoes with a big wedge of lemon. You could even try it with marinated sun-dried tomatoes, olives and basil. If you’ve never had rare tuna, you should…it’s amazing.
