Three Bean Pie / Nancy M.

  • 1 can black beans, drained
  • 1 can white beans, drained
  • 1 can red beans, drained
  • 1 can stewed tomatoes
  • 1 can corn
  1. For pie crust, cream together 1 cup, shortening and 3 cups flour until well blended. Slowly add parts of the 7 tbsp water, kneading dough.
  2. Divide dough into two balls. Roll out each ball to a circle 8-9in in diameter. Place one in the bottom of a pie plate, leaving extra crust hanging over edges.
  3. Drain and put all ingredients in pie crust. Then cover with top crust.
  4. Bake at 400 degrees for about 45-60 minutes. Serve with sour cream.

Veggie Pizza / Heather R.

  • 2 pkg crescent rolls
  • 1 pkg Hidden Valley Ranch dressing mix
  • 2-8 oz pkg cream cheese
  • 1/4 c. mayo
  • 3/4 c. each of chopped:
    • carrots
    • broccoli
    • green onions
    • tomatoes
    • green/red peppers
    • mushrooms
  • 3/4 c. shredded cheddar cheese
  1. Roll out crescent rolls onto cookie sheet and press together. Bake.
  2. Mix cream cheese, mayo, and ranch. Mix together and spread onto crescent rolls.
  3. Sprinkle with chopped veggies and cheese. Serve chilled.
