Vegetarian Dishes
Three Bean Pie / Nancy M.
- 1 can black beans, drained
- 1 can white beans, drained
- 1 can red beans, drained
- 1 can stewed tomatoes
- 1 can corn
- For pie crust, cream together 1 cup, shortening and 3 cups flour until well blended. Slowly add parts of the 7 tbsp water, kneading dough.
- Divide dough into two balls. Roll out each ball to a circle 8-9in in diameter. Place one in the bottom of a pie plate, leaving extra crust hanging over edges.
- Drain and put all ingredients in pie crust. Then cover with top crust.
- Bake at 400 degrees for about 45-60 minutes. Serve with sour cream.

Veggie Pizza / Heather R.
- 2 pkg crescent rolls
- 1 pkg Hidden Valley Ranch dressing mix
- 2-8 oz pkg cream cheese
- 1/4 c. mayo
- 3/4 c. each of chopped:
- carrots
- broccoli
- green onions
- tomatoes
- green/red peppers
- mushrooms
- 3/4 c. shredded cheddar cheese
- Roll out crescent rolls onto cookie sheet and press together. Bake.
- Mix cream cheese, mayo, and ranch. Mix together and spread onto crescent rolls.
- Sprinkle with chopped veggies and cheese. Serve chilled.
